I will, of course, happily eat them either way. (Too happily!) But I like it when they're just barely undercooked. Not soupy, just with a little bit of underlying dough texture.

i think where i differ is that i design my recipes to taste underbaked, but are fully baked. so my perfectly baked is your slightly underdone.

I don't really make them underdone, exactly, but I prefer cookies to be soft, so I don't bake them until they are crisp the way my mother did.

When it comes to brownies, too much doughiness can sometimes cause the brownies to be nothing but goo in the center after they sit around a bit, but I also don't like them even slightly overdone. I don't know that I've ever had brownies come out perfectly. :-)

It's a very delicate balancing act. And one that doesn't seem very easy to replicate when I get it right. (the brownies, I mean) :)

well, i don't like cookies goopy, but i don't like some cookies to be too crisp, either. i think oatmeal should have some chew, and tollhouse should have some, but not as much as oatmeal. shortbread should be not chewy at all tho. peanut butter i don't like chewy at all either. is chewy the same as doughy? to me doughy means goopy and raw, but chewy doesn't.

for brownies i like the center chewy and the edges just a tiny big crisp. that is how the recipe cindy found years ago always comes out. they are very chewy and fudgy. i dont like brownies that are cakelike at all.

No, I agree. I don't want goopy either. Sort of the equivlent, I guess, of a steak that has a little pink in the center. (Paradoxically, when I eat a steak I want it to be well done--no pink in sight. :) )
